Hey,
You don’t need to do anything. When you reach 500 contacts, Manychat will charge you based on your number of contacts you have in your account.
For example:
Between 0–500 contacts, you pay $15
Between 501–2500 contacts, you pay $25

About the number of contacts, they won’t go back to zero, unless you delete them.
