Wondering why instagram sends a different response to the trigger word depending if the use is on a mobile versus desktop computer. Is there a way around this?

IG on Desktop is really buggy and really does not work well with automations.
My suggestion: run your tests on mobile. 95%+ of your audience will be mobile anyways.
