Hello! I have been quite perplexed trying to make this, but is there a way to have a flow triggered (or continued) at a date and time of my choosing instead of the contact’s time zone? I’ve been racking my brain trying to think of a way to do this with all that I know of Manychat and have been VERY surprised that there is not a way that I have found thus far.

You can use a custom field with the exact time, and trigger messages with that.
Something like this:
This will trigger at the exact time set on the field, not based on the timezone.
