i need help from some human in manychat to help me remove this… is driving me crazy not being able to use my business tools correctly….

Hi,
First you have to remove your WhatsApp account from Manychat: https://help.manychat.com/hc/en-us/articles/14281346866460-How-to-remove-WhatsApp-integration-from-Manychat
As you already mentioned, it seems that this is done.
Next step: Go to https://business.facebook.com/latest/whatsapp_manager/phone_numbers, select the correct Business Portfolio and WABA (WhatsApp Business Account) and you will be able to remove the phone number from it.
Now, just use your number to connect it to another platform/ account.
