I am a food blogger and DM my recipes using many chat on both Facebook and Instagram. It is costing me over $1k a month so I want to delete that contacts and bring the cost way down.
I have their email address stored on my eDM system so I do not need them any longer.
My question is, after I delete them, can the user interact again if they start an automation by commenting on a post? Does it treat them like they are a new person?

Hi,
Short answer = YES.
Once they get in touch again, a new contact is created in Manychat. You only lose any kind of data collected and stored to them. But if you only need data you already backed up… no worries at all.
