I’ve submitted a ticket regarding my refund and each time it keeps being marked as solved but yet I’m not getting any emails to confirm the outcome. I’m well within determines regulations to get my refund as this is very frustrating.

That's odd.. did you check your spam folder for any response?
Anyways, if your case meets the refund policy (https://help.manychat.com/hc/en-us/articles/14281409202076-Manychat-refund-policy), it should be processed as expected.
You can also check for all opened Tickets and responses here = https://help.manychat.com/hc/en-us/requests
(Maybe there you find any info about your tickets)
