trying to setup where if my bot can't answer the question it transfers to human and if user sends a message requesting human it transfers to human, I saw about fallback flows but struggling to set up on my current built automation as the reply seems to be in settings for the whole account rather than an individual flow

What you need is to add an Action to Open the Conversation in your flow at the moment you want to do the human handover:
