I'm having the following problem: when I receive a message on WhatsApp, the variable {{last_input_text}} is not being picked up. As you can see, instead of showing the new value of the variable, it just displays the name of the variable itself. I don't know why this is happening or how to fix it.

Please check the data type of the custom field respuesta2. It’s possible that this field isn’t set to a text format and therefore isn’t accepting the value in {{last_input_text}}.

Please take a look at the screenshot below and check if, in your flow, the action block that saves the user's last text input is set up like this:
Make sure the custom field you're using is of type Text (it should have a "T" icon), and that in the "Value" field, you've selected the system field called Last Text Input. If it's set up correctly and still not working, I recommend reaching out to Manychat’s support team so they can investigate further.
