I would like to put a tag on my “Say hi to new followers” automation - when followers click for my free guide, I want it to assign a tag to them, so my team member knows who to follow up with - how do I do this?

Hi,
To get more possibilities with New Followers Trigger you need to Switch to Flow Builder.
This will transform your automation to the classic builder, and you will have the possibility to add tags, conditions and whatever more that Manychat offers. 😉
